Ingredients:
· 1 box firm tofu
· 4 dried shiitake mushrooms (soaked & softened)
· 2/3 cup snow fungus (soaked & softened)
· 2/3 cup black fungus (soaked & softened)
· 2/3 cup canned bamboo shoots
· 2/3 cup dried daylily (soaked & softened)
· 6 slices carrot
· 4 slices ginger
· 2 tbsp chopped spring onion
Sauce:
· 3/4 cup vegetarian broth
· 1 tbsp oyster sauce (or vegetarian oyster sauce)
· 2 tsp soy sauce
· 1 tsp dark soy sauce
· 1/2 tsp sugar
· A few drops sesame oil
· A pinch white pepper
Preparation:
1. Remove tofu from packaging, drain excess water, and cut into large pieces. Pan-fry until golden brown on both sides. Set aside.
2. Briefly blanch snow fungus, black fungus, and daylily in boiling water. Drain and set aside.
3. Heat oil in a wok, sauté ginger and carrot slices until fragrant. Add shiitake mushrooms and bamboo shoots, stir-fry for 1-2 minutes.
4. Add blanched snow fungus, black fungus, and daylily. Stir well.
5. Pour in the sauce mixture and bring to a boil. Simmer for 2-3 minutes.
6. Return fried tofu to the wok. Thicken with the mixture of cornstarch and water.
7. Sprinkle with chopped spring onion and serve hot.
