材料 Ingredients(4 persons):
牛肋排 Prime rib steaks x2
黑胡椒 Black pepper
白蘭地 Brandy 1.4 cup
牛油 Butter 20g
百里香枝 Thyme stalks x 2
牛肉高湯 Beef stock 300ml
奶油(增稠用) Cream (for thickening)
做法:
1. 用鹽和黑胡椒粉為牛肋排調味。
2. 用中高火加熱平底鍋,將牛肋排每面煎約 2 分鐘,塗上黃油和香草。
3. 取出牛肋排,放在盤子上。
4. 將白蘭地和牛肉湯加入同一個鍋中,煮至液體減少一半,加入濃奶油,繼續煮至醬汁變稠。
5. 將醬汁淋在牛肋排上即可食用。
Instructions
1. Season prime rib steaks with salt and ground black pepper.
2. Heat a pan over medium-high heat, fry the steak and for about 2 minutes per side, baste with butter and herbs.
3. Remove steak and place on a plate.
4. Add the brandy and beef broth to the same pan, cook until the liquid is reduced by half, add the heavy cream, and continue to cook until the sauce thickens.
5. Pour the sauce over the steak and serve.
