#Amberat20, an eight-hands Dom Pérignon Society celebration
Recognised as a Tatler Best 100 Restaurant in Asia-Pacific and awarded three Michelin stars, Amber at The Landmark Mandarin Oriental, Hong Kong proudly announces the grand finale of its #Amberat20 celebration on 16 December 2025.
For this milestone evening, culinary director Richard Ekkebus (Amber, Hong Kong: 3 Michelin Stars; Green Star) welcomes an extraordinary roster: Jungsik Yim of Jungsik (New York: 3 Michelin Stars; Seoul: 2 Michelin Stars), Cédric Satabin of Alain Ducasse at Morpheus, City of Dreams Macau (2 Michelin Stars), and Yusuke Takada of La Cime in Osaka (2 Michelin Stars; No. 8 on Asia’s 50 Best Restaurants 2025). Together, they will present an unforgettable anniversary dinner paired with Dom Pérignon, including a special release created to honour Amber’s two-decade milestone.
The Dom Pérignon eight-hands experience
As a member of the Dom Pérignon Society, Ekkebus partners with the Maison to convene an unprecedented eight-hands collaboration for this one-night-only celebration. The menu brings together four of Asia’s most influential culinary voices:
- Jungsik Yim, a pioneer of modern Korean fine dining
- Yusuke Takada, whose work at La Cime channels French technique through a strikingly modern Osaka lens
- Cédric Satabin, custodian of the refined French canon at Alain Ducasse at Morpheus
- Richard Ekkebus, known for contemporary French cuisine shaped by Asian influence and sustainability-driven thinking
Savouring excellence
Dom Pérignon remains one of the world’s most revered Champagne houses, guided by a creative ambition rooted in harmony and emotion. Each Dom Pérignon Vintage is crafted exclusively from grapes harvested in a single year, an exacting challenge that demands singular interpretation and continual reinvention. Its vintages evolve not linearly but through distinct “Plénitudes,” or windows of expression, each revealing new layers of depth and character.
United by a shared pioneering spirit, Ekkebus and his guest chefs will present their own expressions of harmony, exceptional dishes elevated by thoughtful pairings across Dom Pérignon’s rare vintages.

A symphony of flavours
Guests are invited on a gastronomic journey that explores a true symphony of flavours and textures, with each dish meticulously crafted from the finest seasonal ingredients to resonate with the nuanced notes of each Dom Pérignon vintage. The experience opens with chef Yusuke Takada’s black kabocha pumpkin, chestnut and white Alba truffle dumpling with soy milk, dashi, roasted koji, cacao nib and white miso sauce, paired with the tactile Dom Pérignon Vintage 2015, whose fresh peach and nectarine notes lift the earthy perfume of the truffle.
From chef Cédric Satabin, a chilled langoustine with spiced gelée and Kristal caviar reframes “luxury” through layered umami, beautifully matched with Dom Pérignon Rosé Vintage 2009. Voluptuous yet mineral, the rosé brings a radiant counterpoint to the dish’s oceanic sweetness.
Amber’s own contribution, a seared Normandy scallop with marigold tapenade and targette sabayon over bell pepper and Sichuan pepper gel, served with scallop-roe rice crackers, is calibrated with Dom Pérignon Vintage 2012. The Champagne’s taut acidity cuts through the richness of the sabayon, while its noble hints of tobacco and toast add depth and clarity to the palate.
Another highlight: a grilled Hanwoo tenderloin with Korean-style gamtae noodles, in which chef Jungsik Yim and the Jungsik Korea team showcase their refined, modern interpretation of Korean cuisine. To mark the #Amberat20 milestone, guests may further elevate the evening with a glass of Dom Pérignon Vintage 2005 Plénitude 2 (HK$800+ per glass), an exclusive release reserved for the Dom Pérignon Society and private clients. Its darker, more assertive expression: oyster shell, toasted malt, deep mineral tones, makes it a fitting tribute to the occasion.
“There is no better way to conclude 2025 than with this extraordinary event with Dom Pérignon,” says Richard Ekkebus, culinary director at The Landmark Mandarin Oriental, Hong Kong. “As Amber celebrates its 20th anniversary, this is the perfect culmination, gathering visionary chefs for a singular gastronomic journey and toasting our two decades of culinary artistry.”Dom Pérignon Society DinnerDate: Tuesday, December 16, 2025Seating Time: 6pm-8pmLocation: Amber, The Landmark Mandarin Oriental, Hong Kong, 15 Queen’s Road CentralPrice: HK$4,398+ per person, including four vintages: Dom Pérignon 2015, 2012, 2004 & Rosé 2009Additional Pairings: Dom Pérignon Vintage 2013 (Magnum) & Dom Pérignon Vintage 2006 Plénitude 2 at HK$1,200+ per personEmail: lmhkg-restaurants@mohg.comPhone: +852 2132 0066
