One Duck Lane opens at Hyatt Centric Victoria Harbour Hong Kong
Hyatt Centric Victoria Harbour Hong Kong has opened One Duck Lane, a modern Chinese restaurant overlooking the harbour. The name nods to the hotel’s address—1 North Point Estate Lane—and to the kitchen’s central focus: Peking duck. Priced at HK$888 for a whole duck or HK$448 for half, the dish is prepared using Hyatt’s long-standing recipe, roasted in a custom-built oven positioned at the restaurant entrance, then carved tableside and served with classic accompaniments.
Alongside the traditional condiments, One Duck Lane offers a foie gras and truffle parfait (HK$48) as an optional addition, bringing a contemporary note to the dish. A recommended follow-up is the poached rice in supreme duck soup (HK$188 as a second course; HK$268 à la carte), combining diced duck, shimeji mushrooms, crispy rice, sea cucumber and bamboo pith in a clear duck-based broth.
Beyond the duck, the menu spans familiar Chinese dishes from both Northern and Southern traditions, alongside seasonal seafood and Hong Kong staples such as freshly made dim sum.

Executive chef Jack Chan brings more than three decades of experience in Cantonese and Chinese cooking to One Duck Lane. He previously led his restaurant to seven consecutive One Diamond ratings from the Black Pearl Restaurant Guide, and now oversees a menu that stays close to tradition, guided by quality ingredients and precise technique. The room is relaxed but polished, suited to both everyday dining and more considered occasions.
