Cucina’s new signature menu celebrates the finest flavours of Italy
Experience the best of Italy's culinary traditions with chef de cuisine Andrea Delzanno's new four-course signature set menu, available at Cucina until July 25. Chef Andrea has masterfully crafted four elaborate dishes that take guests on a gastronomic voyage through Italy.
The feast starts with a light and refreshing appetiser of octopus carpaccio, orange fennel salad, tomatoes, and lemon oil dressing. This dish highlights fresh produce from Sicily, including oranges and tomatoes, and features octopus caught from the Mediterranean Sea with bright citrus notes from the orange, fennel, and lemon oil dressing.
For the second course, Delzanno draws inspiration from the northern region of Emilia-Romagna with garganelli with stewed duck ragout, pumpkin, and parmesan cheese. This regional speciality combines al dente pasta with a rich and tender duck ragout balanced by the sweetness of the pumpkin.
The gastronomic journey continues to Piedmont, Delzanno's beloved hometown, with the main dish of veal scaloppini, porcini mushrooms, mashed potatoes, and black truffle sauce. The tender veal pairs perfectly with the rich and robust accompaniments of black truffles and porcini mushrooms.
End the meal on a high note with the quintessential Italian dessert—traditional tiramisù, made with lady fingers, mascarpone, espresso coffee, and cocoa powder. Delzanno prepares this dessert according to a traditional recipe from Veneto in the northeastern part of Italy, showcasing the charm of this sweet treat in the most authentic way.
The exquisite four-course set menu is available for HK$888 per person during lunch and dinner until July 25.
