Ming Court debuts Yunnan ancient arbor black tea pudding
Ming Court at Cordis, Hong Kong, introduces its latest artisanal creation: a limited-edition Yunnan Bao Shan 200-year-old ancient arbor black tea pudding with brown sugar (HK$368 per box). Crafted by dim sum head chef Tse Sun Fuk, the dessert showcases wild Dian Hong black tea, harvested from ancient trees in Baoshan, Yunnan, near the China–Myanmar border—an origin prized for its refined floral notes and gentle fruit flavours.
Each pudding is produced in small batches of just six boxes, allowing for precise control of temperature and infusion. The result is a delicately perfumed pudding with a softly glutinous texture that lets the tea’s character come through with clarity and restraint.
Alongside the new release, guests can also enjoy seasonal favourites such as the premium red dates pudding with coconut (HK$368 per box) and Ming Court’s signature Turnip Pudding (HK$398 per box), made with locally grown late-water (winter) turnip. Valued for its natural sweetness, juiciness and tender, non-fibrous flesh, the ingredient reflects the restaurant’s considered farm-to-table approach.
Inspired by the auspicious symbolism and vibrant colours of koi fish, each pudding is presented in an elegant, 100% recyclable container made from biodegradable oyster shell powder, underscoring Ming Court’s ongoing commitment to sustainability and thoughtful festive gifting.
