Above & Beyond unveils innovative and traditional rice dumplings for the Dragon Boat Festival

In celebration of the Dragon Boat Festival, Hotel Icon’s Above & Beyond—fresh off another year of recognition in the Michelin Guide—unveils two distinctive rice dumplings that honour tradition while embracing innovation. The classic steamed glutinous rice dumpling is infused with black truffle, abalone and conpoy for a richly savoury take on the festival staple. Meanwhile, the tricolour dumpling blends durian, pandan and kaya in a daring tropical medley that’s as fragrant as it is indulgent. Packaged in a festive ‘Double Fish’ design symbolising abundance and fortune, these dumplings make for a meaningful seasonal gift.

Craving for a unique and distinctive flavour experience? Executive chef Danny Ho, also known as the Durian Prince, presents a novel creation for the Dragon Boat Festival at Hotel Icon - rainbow sweet dumplings with durian pandan kaya to make the celebration unlike any other. These handcrafted mini rice dumplings showcase natural food colouring: butterfly pea flower (blue), pandan (green) and turmeric (yellow), adding a captivating Southeast Asian touch. Thai glutinous rice possesses a sticky and chewy texture, infused with the sweetness of coconut milk and filled with homemade durian paste made from top-quality durian flesh, kaya and fresh pandan juice. With its exquisite presentation, this culinary masterpiece guarantees an unforgettable experience for durian enthusiasts.

From the Michelin Guide–recommended Cantonese restaurant, Above & Beyond, comes a richly layered rice dumpling crafted by executive chef Wong Chi-ki. This luxurious festive offering features South African abalone (seven-head per catty), Japanese dried conpoy, Yunnan ham, shiitake mushrooms, pork belly, salted egg yolk and truffle sauce—all wrapped in glutinous rice and steamed to tender, aromatic perfection.
