Taste of Giro d’Italia Puglia at Grissini

This summer, Chef de Cuisine Valerio Mandile invites diners on a culinary journey through the sun-soaked flavours of his native Puglia. Available through early September at The Lounge & Bar, this seasonal menu is a tribute to southern Italy’s coastal bounty and rustic charm, elevated with Mandile’s refined touch.

The experience begins with a slow-cooked egg yolk, impossibly rich and silky, paired with Andria burrata for a luxurious opening that melts on the palate. It’s a quietly decadent start that sets the tone for what follows.

Next, artisanal mussels bring a briny punch to a plate of red prawn pasta, an ode to Puglia’s maritime heritage. The interplay of sweet, succulent prawn and savoury shellfish evokes long summer lunches by the Adriatic.

For dessert, Mandile turns to the season’s best: caramelised peaches bursting with sun-ripened sweetness, served with a scoop of silky vanilla ice cream. It’s a simple pleasure, thoughtfully executed.
