Nothing beats a fresh-out-of-the-oven pizza, and there are some days where the perfect slice is all you really want. Whether it’s thick crust, thin and crispy or deep-dish, with whimsical toppings or a perfectly-executed classic, we all have our go-to.

Luckily for us, Hong Kong has an abundance of restaurants with pizza on the menu, offering everything from traditional pizza margherita to unconventional interpretations with more experimental toppings. Ciak - In The Kitchen

I’m one of those horrible people who will sometimes leave a ring of pizza crust on my plate after finishing a pizza—blame it on a love for cheese and toppings, a habitual inclination towards more keto-friendly dining habits and a scarcity of really good pizza dough in Hong Kong. Ciak is one of the few places where I’ll enjoy the crust almost more so than the indulgent pizza toppings, thanks largely to their 36-hour proofing for the dough. It’s enough to make anyone dough-te on their pizzas.

I have quite an experimental palate, so I love it when pizzerias take a risk and incorporate local ingredients into this tried-and-tested formula. That’s why I'm a big fan of Alvy's, particularly their Bak Gwei pizza, which features a sourdough crust, gruyere bechamel sauce, char siu, mozzarella and—here’s the kicker—“geung yong” or the traditional Chinese scallion-ginger condiment. Add to this one of the best tap lineups of locally brewed craft beers in town—how can anyone resist?

Ever since I started a new fitness regime a year ago, I’ve cut out (most) guilty pleasures. But I couldn’t say no to Fini’s Italian American’s Famous Margherita. The restaurant’s take on the classic pizza is a simple, yet seductive mix of homemade mozzarella, red sauce and extra virgin olive oil, and topped with fresh basil for added fragrant aroma. Those with intense crab cravings looking for something on the side need only opt for the signature Typhoon Shelter Crab Linguini. It’s made with fresh blue crab, fermented black beans, pickled chilli and green onion, and it’s the perfect marriage of Hong Kong and Italian American flavours that can be found at Fini’s Soho, Wan Chai and Kowloon locations.

The Pizza Project

Late evenings and pizza are such a natural fit, aren’t they? If I am feeling peckish after work, I turn to The Pizza Project for its handmade pizza. With a fluffy base that is also nice and crispy along the edges and generous toppings, their pizza hits that sweet spot between indulgence and simplicity every time. I opt for the Loads of Meat pizza, which is loaded with salami, ham and sausage, when I am craving for—you guessed it—meat. Among vegetarian choices, you can’t go wrong with the quattro formaggi and its four kinds of cheese, walnuts and truffle honey. If I want something spicy, the ’Nduja, topped with spicy salami, does the job for me. And, of course, I always save room for a cheeky dessert, be it the white chocolate mousse or the tiramisu.

Since the heartbreaking closure of my beloved pizzeria Kytaly, Fiata—helmed by former Kytaly chef Salvatore Fiata—has become a fast favourite. Neapolitan style is the name of the game here and pizza is cooked in high heat for a hot minute and a half, resulting in a crisp crust dappled with char and a fluffy centre topped with all kinds of imported Italian delights. The Diavola by Giovanni pizza with San Marzano DOP, fior di latte di Napoli and bufala cream offers a spicy kick with ’nduja and black Casertano sausages, while the A’salsiccia pizza brings a flavourful mix of Alife onion cream, fior di latte Napoli, caramelised red onions and Italian sausage together.

Emmer Pizzeria & Café

My best casual date night took place at Emmer Pizzeria & Café, where the comfortable booths, floor-to-ceiling windows that look out over the Pacific Place garden and softly twinkling candles that are lit after 5pm elevate the space’s ambience and make it quite romantic. I love sharing a chewy D.O.P. Quattro Formaggi or the rich Truffle Pizza that is generously drizzled with Italian winter truffles, truffle pecorino and white truffle oil with my BFFs. What’s great about its menu is its variety. I can pair my pizzas with a big salad (my go-to is the refreshing House Tomatoes Salad) if I feel like something lighter or a glass of red if I’m in the mood. Bonus: Hong Kong Park is right nearby so I’ll always finish the night with a stroll after a sumptuous, satisfying meal.

The Mickey B Pizza Co

While Happy Valley might seem like a small neighbourhood without much to offer in terms of restaurants, The Mickey B Pizza Co is a neighbourhood pizzeria that churns out amazing thin crust pizzas made in wood stone ovens. My secret weapon to woo friends who venture out to the Valley is the Peking duck pizza, topped with plenty of crispy duck, green and red onions and hoi sin sauce. I can easily wolf down a whole pizza myself with a pint of beer on the side!

Dough Bros

There’s something so special about innovation when it comes to pizza or when chefs do something unexpected, but every now and then, cheap and cheerful just hits the spot. Dough Bros (with locations all over Hong Kong) is my go-to for that reason, but also because they changed the pizza game in Hong Kong with one simple addition that comes with all orders: garlic dip. Their pepperoni pizza with extra jalapenos is excellent on its own—equal parts cheesy, meaty and spicy—but is seriously elevated when dipped into that creamy, tangy and garlicky delight that is their signature, made-in-house condiment. After all, isn’t all food merely a vessel for sauce? Plus: those doughnuts!

Mother of Pizzas

I'm the kind of person who gets heavy cheese cravings. So, when I ordered the Crazy Cheese pizza from Mother of Pizza for the first time, and was able to taste all the different nuances of this tasty dairy mix, I just melted. I also really like their Pepperoni Super Saiyan (great reference, great classic). For those like me who has a relatively small appetite, I find their 48-hours-old dough tasty but light enough to not make me feel full after just two bites, and I appreciate having the option to order half of a pizza for myself. But don’t get me wrong—their toppings are as heavy as you want a good comfort pizza to be! I also love Mother of Pizzas for when I need a place where I can go for a chill and comforting time. I love being welcomed by their open kitchen where you can observe the dough being stretched by hand, the ambiance is so warm and convivial, and if you're in a rush, you can always buy a slice to go!
