For the Year of the Snake, executive chef Wong Chi Ki at Above & Beyond has selected premium ingredients to craft six limited-edition auspicious dishes, available from the first day to the fifteenth day of the Lunar New Year (January 29 to February 12) to celebrate.
Symbolising prosperity and success, thelo hei, featuring 18-head South African abalone, carrots, asparagus, purple cauliflower, pickled ginger, taro and cucumber is a dish every family should enjoy and is perfect for sharing among four to six people. Upgrade to a whole lobster lo hei for an additional HK$580.
Other auspicious dishes include braised dried oyster with dried black moss and conpoy, braised pea sprout with crab meat, Yunnan ham and bamboo pith, braised pork knuckle with lettuce in red bean curd, wok-fried prawn with asparagus, diced water chestnut and elm fungus. The rich and flavourful braised abalone, dried fish maw, sea cucumber, goose web and Japanese mushrooms with abalone sauce dish is highly recommended, and a dish that is said to bring good fortune and abundance to guests.
