食材
紅豆 Red bean 100克
牛奶 Milk 300毫升
砂糖 Sugar 90克
椰漿 Coconut milk 300克
魚膠片 Gelatine Leaf 36克
作法:
1 :
紅豆洗淨,用水浸住,隔水中火蒸1小時至軟身 Rinse red bean. Soak in water and steam over medium heat for 1 hour until soft.
2 :
魚膠片浸水15分鐘至軟身,榨乾水備用 Soak gelatine leaves in water for 15 minutes until soft. Squeeze dry.
3 :
細火煮熱200毫升牛奶,加入砂糖煮溶 Heat 200ml milk over low heat. Add sugar and stir until dissolved.
4 :
熄火,以餘溫煮溶魚膠片 Turn off heat. Dissolve gelatine leaves with remained heat.
5 :
加入餘下的牛奶及椰漿拌勻 Add remained milk and coconut milk and stir well.
6 :
冷卻後放入雪櫃冷藏約半小時至開始凝固 After cooled down, put in fridge for 30 minutes to let the mixture a little bit set.
7 :
加入紅豆輕輕拌勻,倒入已抹油的容器內,冷藏4小時 Add steamed red bean and mix gently. Pour into a container cover with oil. Put into fridge for 4 hours or more.
8 :
小心將紅豆糕倒出,切件享用 Demould carefully. Cut into pieces. Enjoy.
