Each course highlights the best seasonal ingredients. From the bold kung pao-style white ferula mushroom with dried red chilli to the delicate white asparagus paired with baby corn and okra, each dish offers a thoughtful balance of texture and flavour. The meal continues with a delicate bamboo shoot soup enhanced by wild yellow mushroom and Dragon Well tea, followed by mains such as the Hakka tofu with morel mushrooms or black vinegar wonton with fig.
