Nestled in the heart of Central, fine-dining restaurant Castellana beautifully captures the rich flavours of Northern Italy’s Piedmont region. Renowned for its exceptional culinary landscape, Piedmont’s unique geography fosters the growth of high-quality produce, including the coveted Alba white truffle, which is now in season. This rare delicacy is celebrated for its complex aroma and ability to elevate any dish. Castellana sources these exquisite truffles from its private land in Alba, ensuring unparalleled freshness and quality.
Executive chef Romeo Morelli has honoured the arrival of these “white diamonds of the Earth” by crafting an exclusive degustation menu, with each of the four courses thoughtfully curated to complement the intricate aromas of the white truffles. Guests are invited to indulge in a culinary celebration of the autumn season with a delightful Piedmontese twist.
The menu begins with Uovo e funghi, featuring a perfectly poached egg paired with Chanterelle mushrooms and shavings of Alba white truffle. Guests can then choose between Ying & Yang ravioli, filled with Castelmagno cheese, hazelnuts and Alba white truffle, or Tagliolini, faraona e burro, homemade angel hair pasta with guinea fowl and Alba white truffle.
For the main course, options include Merluzzo latte e caviale, grilled Antarctic cod served with Piedmontese milk, green peas and caviar, or Astice blu, zabaione salato e funghi, which features Brittany blue lobster with zabaione, mushrooms, and Alba white truffle, for an additional HK$680. The experience concludes with a hazelnut panna cotta adorned with shavings of Alba white truffle. This exclusive menu will be available from September 17.
