Ingredients:
· Minced pork 220g
· Sweet preserved mustard greens 60g
· Water chestnuts 4 pcs
· Minced ginger ½ tsp
For preserved mustard greens marinade:
· Soy sauce 1 tsp
· Sugar 1 tsp
· Cornstarch ⅛ tsp
· Oil a dash
For pork marinade:
· Soy sauce ½ tsp
· Sugar ¼ tsp
· Oyster sauce ½ tsp
· White pepper a pinch
· Sesame oil a dash
· Cornstarch 1 tsp
· Water 2 tbsp
· Egg white 1 tbsp
Preparation:
1. Choose minced pork with some fat. Mix with marinade (cornstarch, water & egg white ratio is key).
2. Stir and pound until sticky. Marinate for 10 mins.
3. Soak preserved mustard greens for 10 mins, rinse, squeeze dry, and dice.
4. Peel and dice water chestnuts. Mince ginger.
5. Mix greens with its marinade, then blend into pork.
6. Stir in water chestnuts and ginger.
7. Spread mixture on a plate, cover with foil/plastic wrap/lid. Steam over medium-low heat for 20 mins.
8. Drizzle with soy sauce and garnish with scallions.
