1. Battuta di Manzo
Different from what most would expect from a beef tartare, this interpretation by chef Valerio has incorporated a series of unique textures and flavours into the beef tenderloin to further enhance the dish: creamy and rich buffalo yoghurt from Campania, clean and refreshing chicken consommé jelly, and Oscietra caviar which brings umami flavours to the fore.

2. Pollo Piemontese Cotto in Pentola d’Argilla
In this Grissini crowd favourite, Hong Kong three-yellow chicken is brined in salt water, honey and spices overnight. Using a claypot to create a half-roasted, half-braised chicken which retains its moisture, this hearty yet refined dish is perfect for sharing and is served with potatoes, onions, ham and morel mushrooms. The culinary team recommends elevating the dish with an accompaniment of black truffles, when in season.

3. Tiramisu all’Amaretto
This famed dessert uses free-range eggs for the light and fluffy sabayon that's mixed with Galbani mascarpone, a generous splash of amaretto, and three varieties of ground coffee for a perfectly balanced syrup. The decedent tiramisu is served tableside for a touch of Italian hospitality.
