Nagamoto, a Kyoto-Style Kappo Restaurant, to Open on Central's On Lan Street

Having recently seen the addition of 1111 Ones to its lauded collection of fine dining establishments, Central's On Lan Street is set to welcome yet another temple to gastronomy—this time in the form of new kappo-style restaurant Nagamoto.

The restaurant takes its name from chef-founder Teruhiko Nagamoto, a 30-year veteran who has plied his craft at a string of kaiseki restaurants in Kyoto, Osaka and Hong Kong—including three-Michelin-starred Kashiwaya, for which he moved to Hong Kong in 2017 to open its only overseas (and now closed) outpost.

Striking out on his own, Nagamoto's eponymous restaurant continues the larger arc of his career in perfecting the philosophy of shun (旬) in Japanese gastronomy. This age-old concept espouses a hyper-aware approach to seasonality where local produce is procured and served at the exact best moment of its season, in a way that is respectful of the ingredient's natural context—extending even to the tableware and the interior effects on display in the restaurant.

Guests entering the restaurant can already gain a sense of shun from the signboard written in the chef's own calligraphy that greets each diner, as well the ikebana flower arrangements and chopsticks selection personally curated by Nagamoto himself. Likewise, the kitchen team will adjust the ever-changing menu and the dining experience—from the seasonings and ingredients, to the cooking time and even the pace of serving dishes—through a heightened awareness of the seasons as well as interactions with the guests from their open kitchen. 

“Japan’s four seasons have provided the perfect source of inspiration for me to bring my vision to Hong Kong, a city that loves Japanese cuisine," says Nagamoto. "I hope that guests at Nagamoto can appreciate the beauty of the details that my team and I have worked so hard to perfect, from the intuitive service to the elegant plating of the very best seasonal ingredients.”
