Alibi’s chef de cuisine James Oakley has curated an array of refreshing savouries including sake steamed abalone tartare with shiso leaf, hibiscus, and a refreshing rose and beetroot macaron brightened with yuzu gel, among others. Guests can also indulge in countless sweet surprises from the delectable and eye-catching desserts curated by executive pastry chef Roy Ma and his team. Amused by Melvita’s wild rose extract element, Ma has meticulously created a floral-shaped rose wild strawberry sable, rose lychee raspberry almond cake and more.
