The afternoon tea set features a symphony of sweet and savoury delights, each meticulously crafted to represent the beloved characters and moments from the adored tale:
The lemon confection is a tribute to young Dorothy and the iconic blue gingham dress she wore on her journey down the yellow brick road. Lemon confit crafted with locally sourced lemons and fresh mint is wrapped in ivory chocolate whipped ganache and topped with a layer of yuzu cream.
The honey sponge cake is made with award-winning, locally produced honey and the citrus coulis pays homage to the Cowardly Lion.
The cacao creation delights with its diverse textures, including cacao sponge, Valrhona 66% Caraïbe dark chocolate, and caramelised cacao nibs. A little red heart candy on top represents the Tin Man’s determined search for a heart.
Complementing the artisanal pastries is a selection of finger sandwiches crafted by The Lobby Lounge’s head chef Rajiv Chowdhoory. These include blue crab and pomelo, egg and Gueldenstaedtii caviar, smoked salmon and cream cheese, and chicken ballotine with truffle mayonnaise.
Thirst quenching add-ons to enhance the imaginary journey include the Yellow Brick Road cocktail, a refreshing blend of tequila, chamomile tea, passion fruit syrup and lemon juice and the Tornado mocktail, a harmonious mix of vanilla rooibos tea, strawberry syrup and lemon juice.
Complementing the jewel-like pastries in the discovery box is the raspberry, a delicate and alluring creation, that symbolises the kind and considerate Scarecrow, and the vanilla, a masterpiece of refined elegance representing the graceful Hong Kong Ballet dancers.
