Enjoy a Piedmontese summer at Castellana

Castellana steps into the summer with the latest edition of the acclaimed Immersion in Piedmont menu, and introduces a new venture, The Wine Table. Led by executive chef Romeo Morelli, the menu begins withacciughe al bagnetto verde, a Northern Italian classic featuring marinated anchovies filled with garlic, parsley and breadcrumbs, accompanied by a velvety white butter sauce. Next is the artichoke dish, offering a delicately fried exterior that reveals a tender heart, paired with the traditional Piedmontese bagna cauda sauce of garlic and anchovies.

For the pasta course, guests can indulge in the rich carnaroli risotto with porcini, a one-year aged risotto infused with seasonal mushrooms, served with green apple and black garlic gel, and dried mushroom skin. The main course options include the chef’s signature guinea fowl, featuring slow-cooked breast with eggplant and a wing croquette, accompanied by orange and peas; or Oberto’s Fassona tenderloin, an incredibly tender and flavourful beef from Piedmont, perfectly sous-vide and lightly pan-fried, served with Parmesan cheese sauce, veal jus and shiitake. To end the meal, guests can savour panna cotta e pesca, homemade panna cotta served with Piedmontese peach, or select from the extensive premium Piedmontese cheese selection, accompanied by homemade jam and bread.

Castellana has recently received the prestigious Best of Award of Excellence, Two Glasses from the Wine Spectator publication, recognising the exceptional work of director of wine, Alan Tse, and his skills in curating the perfect selection of wine. To celebrate this achievement, Castellana has introduced The Wine Table, offering an immersive experience in the culinary and viticultural traditions of Italy’s Piedmont region. The new Castellana Top 50 By The Glass list allows guests to explore a diverse selection of exceptional wines from an array of wine regions, complemented by a range of Italian snacks, from bruschetta to premium Piedmontese cold cuts and cheese platters, showcasing the essence of Italian happy hours. The Wine Table is now available for reservations from 5.30pm, Monday to Saturday.
