A First Look at Noi, Chef Paulo Airaudo's Upcoming Restaurant at Four Seasons Hong Kong

This September, Argentinian chef Paulo Airaudo is due to unveil his latest dining concept, titled Noi, at none other than the Four Seasons in Hong Kong. The 37-year-old culinarian is best known internationally for opening Amelia, a two-Michelin-starred restaurant in the city of San Sebastian in Spain's Basque Country, which also has a location in Harbour City in Tsim Sha Tsui that opened in late 2019.

Meaning "we" or "us" in Italian, Noi is set to become the Asian flagship brand in Airaudo's globe-spanning stable of restaurants, which in Hong Kong includes Italian eatery Da Filippo, also in Harbour City. The menu will take inspiration from Airaudo's own Italian heritage and upbringing in the Argentinian city of Cordoba, combined with Asian techniques and ingredients in contemporary fashion. Promising to turn "each ingredient into a tribute to the farmers and the natural habitats they’ve come from", Noi's tasting menu will make use of produce sourced from small suppliers in Asia and around the world.

The restaurant itself is designed by Hong Kong's AB Concept, who were also responsible for the interiors of Argo, as well as Four Seasons Kuala Lumpur's Bar Trigona. Initial renderings show a space defined by an aquatic colour palette, with a ceiling relief of marine creatures leading diners through a 'Doodle Garden' lounge towards an intimate dining room of cosy banquettes.

Noi will open in the wake of a number of new Italian entrants, including Rosewood's Bluhouse, Aqua Group's Cantina, and JIA Group's Ramato, while Piedmontese restaurant Castellana is also due to unveil its new Central premises this September.
