Dedicated to ensuring that every guest leaves Baci satisfied, executive chef Alessandro Persico has crafted a selection of seasonal dishes that showcase a variety of premium crabs, each infused with a touch of Italian flair.
The dishes, available during dinner service from September 16 to October 30, 2024, include hairy crab cake (HK$238) with a bouillabaisse teapot and coriander pops. The lightly battered and deep-fried hairy crab cake presents a delightful contrast in textures—crisply golden exterior yet soft and tender within. Served in a bowl of rich bouillabaisse, the dish is topped with coriander pops, which offer aromatic bursts of broth that lend herbaceous notes to the dish with an invigorating depth of flavour.
Homemade tagliolini with crab roe crustaceans bisque (HK$268) featuring fresh and deshelled crab meat and creamy crab roe, cooked in a rich and aromatic Sichuan crustacean bisque is another highlight.
Pizza aficionados will be delighted by Laguna Blue (HK$268), which is topped with creamy stracciatella, potato slices, succulent blue crab meat, cherry tomatoes and lemon zest, further elevated by a sprinkle of garlic chilli and fresh basil.
To finish, a hearty baked apple tart (HK$98), topped with ginger gelato and crunchy freeze-dried fruit will complete the meal.
