Found on the 28th floor of Hotel Icon, the acclaimed Above & Beyond restaurant offers an unparalleled culinary experience that pays homage to the time-honoured traditions of Chinese cuisine.

At the heart of the menu is the revered crispy fried chicken, a fixture at auspicious celebrations that symbolises prosperity and meticulously prepared by executive chef Wong. The three-yellow chicken is first marinated for six hours in a fragrant blend of salt, maltose, and Zhejiang vinegar before being air-dried and fried to perfection. The result is a symphony of tender succulence and delicate crispness, available in very limited quantities each day.

Alongside this iconic dish, Above & Beyond also preserves the intricate craftsmanship of traditional Cantonese dim sum. As the art of handmade dim sum gradually fades, the restaurant's skilled chefs remain steadfast in their commitment to time-honoured techniques. Dishes such as shrimp and conpoy dumplings in superior broth, steamed pork dumplings with pork liver and steamed sweetened sesame rolls are painstakingly prepared, often requiring hours or even entire days of meticulous work to perfect the delicate textures and flavours.
