Sunset Grill Mixes a New Bar Story with Novel Signature Cocktails

Everyone loves a good bar story, and a visit to the destination rooftop bar at Sunset Grill promises ice-breaking cocktails with extra umami. As part of its new cocktail menu, the bar offers a quartet of cocktails inspired by local ingredients in the community as well as classic cocktails with a modern twist.

The unique cocktails enjoy the distinction of not just being from Hong Kong but the Lantau community itself, using lap cheong, local honey and Tai O dried shrimp oil. Each handcrafted presentation is shaken or stirred to perfection and created to draw the drinker in visually.

Local Umami

The Lap Cheong Gin Fizz involves fat-washing the Beefeater gin with the lap cheong before mixing it in a traditional citrusy foamy cocktail. The gin is infused with molecular flavours of lap cheong for a rounder mouthfeel balanced by the fizz.

The cousin of the fizz is the sour. The Mui Wo Gin Sour features butter-washed Beefeater gin mixed with local Mui Wo honey syrup before being topped with decadent champagne foam. The ingredients are shaken vigorously, topped with champagne foam and garnished with shards of honeycomb.

The Honey Old Fashioned riffs off of the classic using local honey and Bulleit bourbon with chocolate bitters and honey. What was once a tonic for the morning can now be enjoyed as the sun sets on the rooftop terrace.

Lantau Mary is a delicious variation on the brunch classic, the Bloody Mary cocktail. It features Tai O dried shrimp-infused vodka, mixed with a Hong Kong-style dried citrus peel sauce, tomato juice reduction and Tabasco, salt and lemon juice, for the perfect quaffable pick-me-up you'll want more than one of.

New Modern Classics

The Charred Pineapple Sour is a modern cocktail of Del Maguey Vida mezcal, Olmeca silver tequila with charred pineapple syrup and chocolate bitters, finished with pineapple and coconut flakes.

The Lavender Guava Colada helps you find your place in the sun with its heady tropical mix of Pampero Blanco white rum, lavender shrub, guava juice and coconut water.

The Orange Cacao Crusta takes a legend of the bar world and a close cousin of the Sidecar cocktail and gives it a modern twist. It features Martell VSOP with maraschino liqueur, orange curaçao and chocolate bitters served in a modern coupe glass for a sophisticated touch.

Raspberry Flirtini is fun in a glass – it’s romantic, fruity, enticing and bubbly. The twist is Beefeater gin (not vodka), shaken with Cherry Heering, raspberry purée, pineapple juice, and topped with prosecco.

Sunset Grill also offers four new zero-proof cocktails and mixes an enviable gin-and-tonic from its newly expanded range of gins from Hong Kong (Bauhinia), Thailand (Iron Ball), America (Aviation Gin) and Germany (Monkey 47).

Each cocktail is priced from HK$110 plus service charge, while zero-proof mocktails are HK$75 plus service charge.
