Leading the charge, Épure has been selected for a culinary collaboration in which chef Aven Lau will join forces with Vancouver’s Michelin-starred Published on Main for a two-night-only affair on November 25 and 26. Priced at HK$1,888 per guest, this exclusive menu showcases a fusion of Lau’s refined techniques and Canadian chef Gus Stieffenhofer-Brandson’s farm-to-table ethos.
Stieffenhofer-Brandson, Published on Main’s executive chef, brings a rich heritage of Canadian flavours, rooted in his childhood on family farms, which has shaped his culinary philosophy. Joining him is Lau, Épure’s talented chef de cuisine, who brings experience from Asia’s finest kitchens, including Singapore’s three-star Odette and Hong Kong’s own Belon. With accolades like Tatler’s Rising Star 2022, Lau is set to make this collaboration a standout on Hong Kong’s dining calendar.
