Exclusive: First look at Marmo Bistro, Rosewood Hong Kong’s new French restaurant

For those following the evolution of Rosewood Hong KongTatler Best’s Hotel of the Year, Best City Hotel and Best 100 Hotels 2024—and its culinary offerings, the opening of Marmo Bistro marks a significant moment for the hotel as it embraces French cuisine for the first time.

Taking over the space formerly home to Italian restaurant The Dining Room, this new concept offers an intimate and elegant take on the classic Parisian bistro. Under the guidance of chef de cuisine Giovanni Galeota, Marmo delivers a modern approach to French dining, with a menu of reimagined classics, a curated drinks programme, and a sleek marble-accented design.

Galeota’s menu is a confident take on French gastronomy, offering 18 dishes and five sides. Starters set the tone with refined updates on bistro favourites: thon à la niçoise swaps tuna confit for akami tuna, accented with quail eggs and anchovies, while the gratinée à l’oignon delivers a deeply savoury onion soup capped with bubbling Gruyère and Comté.

Main courses highlight both seafood and meat, from the butter-basted sole meunière, its bones removed tableside for a polished finish, to the côte de boeuf à la Bordelaise, a roasted Argentinian rib-eye paired with bone marrow and a red wine glaze that leans into indulgence. The cuisse de grenouille—organic frog legs served with parsley risotto and garlic sauce—gives a nod to a dish synonymous with French culinary tradition, while desserts like the tarte tropézienne take a lighter, fragrant approach with orange blossom cream.

No bistro experience is complete without the perfect pairing. Marmo’s drinks programme includes a wine list with selections from iconic French regions, including a Bandol Rosé from Domaine de Terrebrune and the lively Philipponnat Royale Réserve Brut NV Champagne.

Cocktails lean on aperitif culture, with highlights like Sidecar, a zesty mix of French brandy, citrus and Pierre Ferrand Curaçao, and the Tunnel, a fresh twist on the Negroni featuring Citadelle gin and Campari.

The restaurant’s design reflects the elegance of its namesake, marble, with sleek accents and warm lighting that evoke the charm of a Parisian neighbourhood bistro. Whether diners are gathered for a relaxed lunch or an intimate dinner, Marmo’s ambience strikes the perfect balance between sophistication and comfort. The open kitchen adds a touch of theatre, letting diners catch glimpses of the culinary craft that defines the experience.

The French restaurant is now open and in its soft opening phase, with reservations available at rosewoodhotels.com.
