Macau's sushi scene gets a big boost with the highly-anticipated opening of Sushi Kissho by Miyakawa this June. The renowned chef-founder Masaaki Miyakawa, one of only five sushi masters in Japan to hold three Michelin stars, brings his edomae sushi expertise to Raffles at Galaxy Macau.
Sushi Kissho embodies the essence of wabi-sabi, the Japanese art of finding beauty in simplicity. Miyakawa's philosophy emphasises sourcing the finest seasonal ingredients directly from Japan, ensuring every bite is true to its season and is expressed at the peak of flavour.
Led by executive chef Hironori Satake, the chefs at Sushi Kissho have been trained by Miyakawa himself and boast of a collective 98 years of expertise in intricate techniques like rice preparation and knife skills. Miyakawa's brand of sushi-making blends Edomae tradition with Hokkaido influences with a focus on delicate small plates accentuating umami.

Hailing from rural Hokkaido, Miyakawa began his career at Sushiden Kenzen in Tokyo and later at Sushi Yoshitake. After a stint in French cuisine, he returned to work with Sushi Yoshitake at its Hong Kong outpost, culminating in its three-Michelin-star distinction in 2014.
Upon returning to Hokkaido, Miyakawa founded his eponymous restaurant, Sushi Miyakawa, achieving three Michelin stars in a remarkable three-year span by 2017—the only Hokkaido-based sushi chef to hold this accolade. After opening other sushi restaurants in Niseko and Tokyo, Miyakawa continues to shape the realm of sushi dining with Sushi Kissho's debut in Macau.
Sushi Kissho by Miyakawa is due to open in mid-June for dinner only for MOP 2,888 per person.
