As winter approaches, Michelin-starred Cantonese restaurant Ming Court at Cordis, Hong Kong, unveils a new series of seasonal offerings designed to warm the soul. Ming Court and Chinese kitchen executive chef Li Yuet Faat and his team have carefully selected a variety of seasonal ingredients, including tender mutton, preserved meats, and soft, chewy Shanghainese rice cakes, to craft a comforting collection of winter dishes.
Highlights include mutton brisket, shiitake, bamboo shoot and water chestnut, braised in a clay pot, and lobster, ginger, shallot, spring onion and Shanghainese rice cake braised in a clay pot. The sommelier is on hand to offer expertly curated wine pairings for your choices, enhancing the overall dining experience.
In addition, Ming Court has also curated a winter solstice festive degustation menu, perfect for family gatherings. This menu features Ming Court’s signature dishes, including supreme barbecued pork loin with honey, a winter solstice festive casserole, roasted crispy-skin chicken, glutinous rice, and more.
The winter solstice festive casserole is served in a reusable casserole clay pot, which can be reheated with an open flame or induction cooker, guests are welcome to order for takeaway or dine-in. The casserole is simmered in a rich and flavourful abalone sauce with a variety of premium seafood, including 10-head abalone, Lau Fau Shan dried oyster, sea cucumber, conpoy, shiitake and tiger prawn.
