Savour the unique flavours of Yunnan mushrooms and seasonal specialties at One Harbour Road

Executive Chinese chef Chan Hon Cheong of Grand Hyatt Hong Kong sources the freshest, nutritious Yunnan wild mushrooms to curate a variety of seasonal dishes. Highlights include the flavourful and aromatic Yunnan termite mushrooms with sweet Hokkaido scallops. Yunnan termite mushrooms are often referred to as the King of Mushrooms in Chinese cuisine as they have an exceptionally sweet and unique flavour. Chan also uses homemade XO sauce for stir-fry seasoning, which not only complements the termite mushrooms’ taste but also brings out the sweetness of the scallops, creating a rich and delicious layer of flavours.

Another new creation is the crispy Loong Kong chicken with ginger and shallot sauce, which is being served at One Harbour Road for the first time. Chan has enhanced this deep-fried Loong Kong chicken by serving it with a red scallion soy sauce. Unlike regular soy sauce, this version is made by stir-frying dried scallions and fresh scallions together, which creates a richer taste with more aroma. The seasonal menu is available now until October 15, 2024.
