Originating from Naples, chef Ciro Petrone’s culinary journey began in his childhood kitchen, where he watched his mother skilfully prepare pasta and seafood. Harbourside presents Petrone’s unique take on classic potato pasta, served straight from a parmesan wheel. He begins with a rich, aromatic broth of carrots, celery, cherry tomatoes and potatoes before adding piping hot pasta to the hollowed-out cheese wheel. The Harbourside chefs then elevate the dish with a generous blend of parmesan, smoky cheese and a hint of truffle, creating a deeply satisfying, soul-warming experience.
