Legrandois recommends the 2022 Domaine des Sables Verts Saumur Champigny “les Poyeux”, which complements the gaminess of pigeon or turkey. Meanwhile, for red meat, he suggests a “made in Margaux” red wine, the 2003 Chateau Giscours. And why not serve a magnum?
